(Nr Marlborough, Wiltshire)– According to doctors, tea offers a variety of benefits for a person who drinks it on a regular basis. Tea has anti-inflammatory benefits as well as antioxidant properties. Those who drink tea are at a lower risk of diabetes and cardiovascular disease. Making tea without additives also contains very few calories, making it a healthy choice for a drink.
The downside to tea is the amount of pesticides that might be used in the production and the lack of knowing what sources were used to make the tea. For those concerned about the environment, the carbon footprint created when teas are shipped across the world is also a concern.
Williamson Fine Teas Ltd. is a fifth-generation company attempting to alleviate these concerns with their new website. The consumer can choose from a variety of flavors and can even choose tea grown at the farm they prefer. This is done by clicking on the name of the farm on the main website and taking a look at what teas are grown there.
Magor stated, “Our teas arrive in a unique elephant container. When it comes to sugar-free or diabetic chocolate there is a warning on the label stating that it has a laxative effect. That is because when people enjoy too much of the chocolate that contains the sugar alcohol Maltitol it can result in digestive upset. The American Dietetic Association ‘advises that more 50 grams of sorbitol or 20 grams of mannitol per day can cause diarrhea.
But the reason that diabetic chocoholics like it so much is that it is slowly absorbed in the intestinal tract so only a small portion is digested and absorbed therefore they don’t need to use little to no insulin. Therefore diabetics really need to read the label to see how many grams of sugar alcohol is in the product. Although there have been chocolates for diabetics for years, once in a while a person will encounter an less then authentic taste with chocolate.
There are newer forms of diabetic chocolates based on maltitol. Maltitol is a natural occurring sugar found in starch. These sugar-free chocolates based on maltitol don’t have the same unpleasant aftertaste that other artificial sweeteners often have. Besides maltitol is very stable and has high melting point making it great for in the of making chocolate.
Maltitol based chocolates tastes almost as sweet as sugar based chocolates except fewer calories and doesn’t cause tooth decay like sugar does. An additional benefit of Maltitol is that unless you eat an excessive amount of the chocolate it shouldn’t cause stomach upset. it also as a replacement of fat and it still gives the chocolate that rich creamy taste.
In the recent past diabetic chocolates were based on saccharin which became popular during the Second World War because the sugar supplies were scarce.
During the sixties sweeteners were blended with saccharin were in attempts to improve texture and flavour. So when in the 80’s when aspartame came into being was like the greatest thing that came along since sliced bread. That was because it could be blended with fruit flavors. However, this has caused some misconceptions about “diabetic” foods among people with diabetes.
Unfortunately people confuse sugar-free from diabetic. Thinking that they can indulge themselves, sugar-free still has carbohydrates.
What people don’t realize is that they can make their own diabetic chocolate.
You start with finding sugar-free nuggets and wafers that can be used in diabetic chocolate. It takes a little research on the internet. Then once that is done then get molds that you like. Then melt the chocolate slowly over a double boiler. If you don’t have a double boiler then just use a pot over another pot that has the water in it. Just make sure that no water gets into the chocolate otherwise it gets really runny. Stir continually so it doesn’t burn! That is very important I found out myself! Some people try the microwave oven but you have to do it very slowly at 30 second intervals, once again so it doesn’t burns. But on the up side there isn’t any water contamination.
Once the chocolate is properly melted just pour it into the molds and let it harden (this is a cheat, put in the refrigerator.)
So a word to the wise just watch yourself so you don’t eat too much. There are that problem of that would be diarrhea and since so have a high fat contain there maybe a some weight issues. So read the labels before you buy.
Cadbury was founded almost 200 years ago and has since stolen the hearts of chocolate lovers everywhere.
The company makes three of the United Kingdom’s top 10 best-selling chocolate bars, and the first one is Cadbury Dairy Milk. According to Bloomberg, in 2012, Cadbury Dairy Milk was the fifth most popular chocolate bar in the world, with sales amounting to $2.5 billion. Cadbury Twirl milk chocolate bar is also a U.K. favorite, as is Wispa.
The company’s products also include Double Decker, which is made with nougat-whip and Rice Krispies; Crunchie, which is chocolate and a honeycomb filling; and Fudge, which is, fudge and milk chocolate combined in bar form.
Hershey’s has owned the rights to making and distributing Cadbury chocolate in the U.S. since 1988, and in 2010, U.S.-based food company Kraft took over U.K.-based Cadbury, causing a significant amount of controversy.
Discord aside, though, the chocolate has been high quality from the beginning.
1. 1824 was the beginning of Cadbury as we know it.
93 Bull Street in Birmingham was the site of John Cadbury’s grocer shop. His wares included cocoa and drinking chocolate that he made himself with a pestle and mortar. Cadbury was only 22 years old at the time.
2. The American and U.K. versions taste different.
British-made Cadbury uses a slightly different recipe than the American-made version, just as Mexican Coca-Cola differs from that made in the U.S. The first ingredient in American Cadbury chocolate is sugar, but milk is listed first in the British version.
3. Cadbury Dairy Milk has a glass and a half of milk in every half-pound chocolate bar sold in the U.K.
The classic logo of a glass and a half of milk being poured appears on the wrappers of Cadbury Dairy Milk chocolate bars, which were first sold in 1905. The logo represents the milk, which is fresh from the British Isles, in each bar.
4. Cadbury Dairy Milk has been fair trade chocolate since 2009.
The move reportedly tripled sales for cocoa farmers in Ghana, increased fair trade cocoa sales for certified farming groups that already existed, and created opportunities for thousands of farmers to reap the fair trade system’s benefits.
5. Cadbury eggs with cream fillings were sold in 1923, but the iconic Creme Egg didn’t appear until 1971.
TV advertising helped sales take off in 1975, and now, over 200 million Creme Eggs are sold every year in the U.K. The company’s Bournville factory in Birmingham has the capacity to make over 1.5 million Creme Eggs each day.
I don’t know why I didn’t start eating organic food years ago. I kind of knew that there were some problems with eating non-organic food, due to the way it is grown or raised, but I just ignored those issues. I think that is what most people do, they just choose to be ignorant about the subject, so that they don’t have to think about the chemicals they are putting into their body. I am looking at the site for New Century Organic which is a company that sells organic food and other organic products as well. Read the rest of this entry »
We all hear about how fresh fruits and vegetables offer nutrition and how we need the vitamins and minerals in them to strive, but have you ever heard about the health benefits that chocolate offers, because many people have not. Many people are not aware of it but dark chocolate offers a lot of nutrition. Don’t get it confused with your regular milk chocolate which does not offer the same health benefits, but as long as you eat it in moderation, you will receive an array of dark chocolate nutrition.
The Benefits Of Dark Chocolate Nutrition
Dark chocolate is rich in antioxidants where other types of chocolates are not. Antioxidants work to kill off free radicals in the body. Free radicals are harmful molecules that are destructive to the body. It has been shown that these free radicals can cause heart disease and cancer as well.
Besides this, there are also many other components to dark chocolate nutrition that you will want to be aware of. Recent studies have shown that dark chocolate – when eaten in moderation of course – offers an array of health benefits, and actually contains flavonoids similar to those found in green tea, and we all know how healthy green tea is.
It can help to decrease blood pressure, improve circulation, lower death rate from heart disease, improve function of endothelial cells that line the blood vessels, improve digestion and stimulate the kidneys, and dark chocolate has even been used to treat patients with anemia, kidney stones and poor appetite. Obviously this dark chocolate nutrition information is very interesting and makes us all feel as though we now have a reason to eat more of the stuff, but make sure that you do not go overboard. You can really only benefit from dark chocolate nutrition if you eat it in moderation.
Although dark chocolate nutrition is beneficial to your health it also contains a large amount of calories. If eaten in excess you are sure to pack on the pounds as well as reducing the dark chocolate nutrition you will receive. If you are careful and take it in small quantities everything will be just fine. A smaller portion means that you still maintain the health benefits that dark chocolate nutrition has to offer. If you would like more information contact your doctor or nutritionist. They may also be able to give you tips on where to find the best quality dark chocolate in your quest for dark chocolate nutrition.
As a cook early on in my career, using a microwave for anything except melting butter was anathema. But as a busy working mother, I’ve come to terms with using a microwave; in fact, I’m on very good terms with mine. All snobbery gone, I rely on it for everything from making granola to reheating leftovers. I’ve even been known to reheat day-old coffee on a particularly bad morning. Yeah, don’t judge me—isn’t bad coffee punishment enough?
Craving lasagna? Use a mug and make it in the microwave
Wondering what else I could do with my microwave, I hit the web and fell into a vortex of eye-opening hacks. Some were quite silly, but others so compelling I had to try them out for myself. I was blown away by the results. Here are my top nine picks for innovative ways to get the most out of your microwave.
1. Molten chocolate lava cake
As if digging into a gooey molten chocolate cake isn’t prize enough for your effort, imagine having it in less than two minutes without dirtying ANY bowls? The recipe I tried was really quite satisfying. It has you—in your mug—whisk together melted butter, cocoa, sugar, milk, flour, and baking powder and drop in a chunk of chocolate. It gets nuked on high power for 30 seconds (I gave mine 40) and it was ooey and gooey and steaming and luscious. I think next time I’ll try these with Halloween candy—I’m thinking Dark Chocolate Milky Way minis, Three Musketeers minis, or Reese’s Peanut Butter minis.
These mini microwave chocolate cakes will rock your world
2. Shucking corn
This trick is amazing—I wish I’d discovered it this summer when corn season was in full swing. Simply microwave an ear of corn (husks completely intact) on high for 4 minutes. Using oven mitts or a clean dry kitchen towel, hold the ear and cut about one-inch off the bottom, stem end. Holding the top portion in one hand, squeeze it so that the fully cooked ear of corn comes out the bottom, completely clean. The silks will remain inside the husk. It’s amazing!
3. Dulce de leche
I’ve always only made dulce de leche (milk caramel) by simmering a can of sweetened condensed milk in a large pot of water for about three hours. It’s super easy but still needs attention to make sure the water hasn’t boiled away. Microwaving it (out of the can of course) was an epiphany. I poured the liquid into a deep, microwave-safe bowl and cooked it for four minutes on 50 percent power, stopping and stirring halfway through. Then reduced to 30 percent power and cooked for about 12 more minutes, stopping and whisking every two minutes. The texture looks really curdled, but gets smooth when you whisk it. The color wasn’t as deep as the boiled can method, and the texture was a bit thick, but in a pinch, it did the trick.
4. Poached eggs
Never again will I tell my kids there’s not enough time for poached eggs before school. In less time than it takes to toast an English muffin, the egg was ready. No waiting for the water to boil, no cracking the egg into individual ramekins before adding them to the pan, no worrying if the eggs will fall apart when I lift it out of the pan. I just cracked the egg into a microwave-safe bowl, added 1/3-cup water and ½ teaspoon vinegar, covered the bowl with a plate and cooked on 80 percent power for one minute. My microwave is 1100 watts, so following the recipe here, my first attempt was a bit overdone. Second time around, I cooked at 50% and it was perfect—set whites, runny yolk.
5. Parmesan Cheese Crisps
Also known as frico, these crispy cheese crackers are delicious garnish to soups, salads, pasta, or even eaten out of hand as a cool chip alternative. I’ve made them in a skillet on the stove and a baking sheet in the oven, and the microwave version is by far the easiest and most immediate. I sprinkled 2 tablespoons of freshly grated Parmesan on a sheet of parchment and microwaved on high power for about 90 seconds, until sizzling and brown. As the cheese cools, it gets crisp. You can mold them into tiny cups by pressing them into a mini muffin pan while still hot.

6. Peeling garlic
I have a red silicone tube that peels garlic pretty nicely, and I’ve tried the shaking-garlic-cloves-between-two-large-bowls trick, which also works well, but both require effort and necessitate cleaning additional equipment, which I resent for a few cloves of garlic. Of course, a quick smack with the side of a chef’s knife is the familiar standard, but for peeling whole cloves super quickly, the microwave is a revelation. I started with three cloves and nuked them on high for 20 seconds (too long) and the skins fell away effortlessly. The garlic was a little rubbery after sitting, so I tried again for a few seconds less and it was spot-on. I just run them under a little cold water to refresh them.
7. Toasting nuts, coconut and spices
I first discovered using the microwave to toast nuts years ago when I was developing a recipe for walnut pesto. I realized I’d forgotten that crucial step and didn’t want to be sidelined while the oven preheated, the nuts toasted and cooled. Just spread the nuts, coarsely broken (or in the case of almonds, slivered or sliced work best) and tossed with a teeny bit of canola oil, on a microwave safe plate and toast for about 6 minutes (or more depending upon your machine) stopping to shake every so often. Hazelnuts take longer than pine nuts but it’s best not to leave any nut unwatched. They can burn in an instant. Coconut takes just a minute or two, with a careful stir halfway. Spices, the same, but you should let your nose be your guide on these. They can burn quickly and become acrid.
8. Scrambled eggs
I remember being sent a microwave-scrambled-egg-maker years ago for testing that was supposed to revolutionize the way we made eggs. Skeptical at best, I gave it shot. The results were pretty awful—watery, rubbery eggs cooked into a solid, un-moldable mass. But while researching online, the results looked kind of appealing so I thought I’d give it a try. I buttered the inside of my coffee mug, and whisked together 1 egg, 1 tablespoon of milk, a pinch of salt and pepper. I cooked it on high power for 40 seconds until it was partially solid. I stirred it with my fork to break it into smaller curds and stirred in a large pinch of shredded cheese. Nuked it for another 10 seconds and it was done. The cheese was melted and the eggs were actually fluffy and tender. Try adding some chopped chives or crumbled bacon or smoked salmon for extra flavor.

9. Cajun-style roux
After testing five turkeys for all of the Thanksgiving stories I worked on this past month, I’ve been up to my eyeballs in leftovers. Chile? Done. Potpie? Yup. Enchiladas? Yes! Wanting something different, I had a hankering for gumbo. I stood over the stove painstakingly stirring my roux (equal parts flour and oil) for 45 minutes until it was the color of milk chocolate. Kinda defeats the purpose of using leftovers, no? It wasn’t until I made dulce de leche in the microwave that it hit me that roux would work here as well. Wish I’d would’ve thought of that last week! I used a pie plate to try it out, but if making it in large quantity (enough to actually make gumbo) a four-cup Pyrex measuring cup is ideal. I combined the flour and oil and cooked it on high for five minutes. Then another five minutes, stopping and whisking every minute to make sure it was cooking evenly. The texture will look dry and pebbly, but as soon as you whisk it, it becomes runny and smooth and really, really hot! Make sure you have the veggies chopped and ready to add to lower the temperature and stop the flour from burning.

Chocolate ganache is delicious but despite only consisting of two ingredients — chocolate and cream — it’s difficult to get it right. The trick is balancing the ratio of chocolate and cream to get the consistency you want.
Over at Kitchen Conundrums, Thomas Joseph goes through three different versions of chocolate ganache which are used for various purposes. To turn the ganache into truffles, you would need to use two parts chocolate to one part cream.
A rich chocolate frosting to add onto cakes, you would use an equal ratio of chocolate and cream. For a thinner glaze for things like cupcakes or bunt cakes, you would increase the amount of cream.
